Ingredients
  

For the Steak

  • 4 pieces beef medallions or small steaks (about 1 inch thick) Use tender cuts for flavor and juiciness.
  • 2 tablespoons olive oil Can substitute with butter for richer flavor.
  • to taste Salt Essential for seasoning the steaks.
  • to taste Pepper Essential for seasoning the steaks.

For the Mushroom Sauce

  • 2 tablespoons butter Adds richness to the sauce.
  • 2 cups mushrooms, sliced (cremini or button) Adds earthiness to the dish.
  • 2 cloves garlic, minced Enhances flavor.
  • 1/2 cup beef or chicken broth Homemade is great, but store-bought works too.
  • 1/2 cup heavy cream (or half-and-half) For a creamy texture.
  • 1 teaspoon fresh thyme leaves (optional) Brightens up the sauce.

Instructions
 

Preparation

  • Pat the medallions dry with paper towels and season both sides generously with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat until shimmering.

Cooking the Steaks

  • Add the steaks to the skillet and cook for about 3-4 minutes on each side for medium-rare, or until they reach your desired doneness.
  • Remove the steaks from the pan and set aside.

Making the Sauce

  • In the same skillet, reduce the heat to medium and add the butter. Once melted, toss in the sliced mushrooms.
  • Cook mushrooms for about 4-5 minutes until browned, then add the minced garlic and cook for another minute.
  • Pour in the broth, scraping up any browned bits, and let it simmer for 2-3 minutes.
  • Add the heavy cream, season with salt and pepper, and thyme if using. Let it simmer for another 2-3 minutes until thickened.

Finishing Touches

  • Return the cooked medallions to the skillet, spoon the sauce over them, and warm through for a couple more minutes.
  • Plate the steaks and drizzle the creamy mushroom sauce on top before serving.

Notes

For best results, use room temperature steaks. If you prefer a thicker sauce, allow it to simmer longer. Adding a pinch of red pepper flakes can add a nice heat.
