Ingredients
  

For the ribs

  • 2-3 pounds ribs (baby backs or St. Louis style) Look for good meat coverage and avoid too much fat.

For the marinade

  • 1/2 cup honey Use the real stuff, not honey syrup.
  • 6 cloves garlic, minced
  • 1/4 cup soy sauce Low sodium works great.
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon red pepper flakes Adjust to your heat preference.
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation

  • Remove the membrane from the back of the ribs.
  • Season both sides with salt and pepper.

Making the marinade

  • In a bowl, combine honey, minced garlic, soy sauce, brown sugar, rice vinegar, grated ginger, red pepper flakes, and olive oil. Mix until well combined.

Marinating the ribs

  • Place ribs in a large ziplock bag or dish and pour 2/3 of the marinade over them, saving the rest for basting.
  • Let them marinate for at least 4 hours, but overnight is even better.

Cooking the ribs

  • Preheat oven to 300°F (150°C).
  • Place ribs on a foil-lined baking sheet, cover with another piece of foil, and bake for 2.5 hours.
  • Increase oven temperature to 425°F (220°C), brush ribs with remaining marinade, and bake uncovered for 15 minutes until beautifully caramelized and sticky.

Notes

For a complete meal, pair with fresh sides like Grandma Birdie's broccoli salad. Don't forget napkins as these are finger foods!
