Main Ingredients

  • 1.2 kg bone-in, skin-on chicken thighs or drumsticks Approximately 5 – 6 pieces
  • 1 piece red onion, peeled, cut into wedges
  • 3 cloves garlic, minced
  • 3 tbsp honey
  • 3 tbsp soy sauce
  • 1 tbsp apple cider vinegar (or ordinary white vinegar)
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • to taste sesame seeds
  • to taste fresh coriander/cilantro leaves (or other herbs like green onion, parsley, chives)

Instructions
 

Preparation

  • Preheat your oven to 200°C (390°F, or 180°C fan).
  • Line a baking dish with foil and then with baking paper, ensuring the chicken fits comfortably.
  • In a bowl, mix the honey, soy sauce, vinegar, sesame oil, and black pepper to create the glaze.
  • Place the onion wedges in the baking dish and lay the chicken on top, skin side down. Pour the glaze over the chicken.

Cooking

  • Bake in the oven for about 50 to 60 minutes, turning the chicken over after 25 minutes.
  • If the glaze isn't thick and syrupy, temporarily remove the chicken and let the pan reduce for a few minutes.
  • After turning, coat the chicken in the glaze by squishing it in with a spoon.

Serving

  • Serve your sticky honey soy chicken hot from the oven with rice and steamed greens, topped with sesame seeds and fresh herbs.

Notes

If you prefer a spicier kick, add a pinch of chili flakes to the glaze. Marinate the chicken in the glaze for a few hours or overnight for extra flavor. Make sure not to overcrowd the baking dish.
