Ingredients
  

Beef Marinade

  • 1 lb beef sirloin, thinly sliced
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce

Stir-fry Ingredients

  • 1 tbsp cooking oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 lb bok choy, chopped
  • 1/4 cup beef broth
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil (optional)
  • Salt and pepper to taste

Preparation

  • In a bowl, combine sliced beef, cornstarch, and soy sauce. Marinate for at least 15 minutes.

Cooking

  • Heat cooking oil in a wok over medium-high heat. Add marinated beef and stir-fry until browned. Remove and set aside.
  • Add onions and garlic to the wok, stir-fry until softened.
  • Stir-fry chopped bok choy until wilted but slightly crisp.
  • Return beef, add beef broth, oyster sauce, and remaining soy sauce. Simmer until sauce thickens.
  • Adjust seasoning with salt and pepper, serve hot over rice.

Notes

Cut the beef against the grain for more tender pieces. Don’t overcook the bok choy; it should be bright green and still crisp. Feel free to add other vegetables like bell peppers or carrots for more variety. To store leftovers, let them cool completely and keep in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or microwave until hot.
