Stir-fried Beef and Water Spinach

Ingredients
  

For the beef marinade

  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon black pepper

Main ingredients

  • 1 lb beef sirloin, thinly sliced and marinated
  • 1 lb water spinach (kangkong), trimmed and roughly chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cooking oil
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sesame oil (optional)
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a bowl, combine the beef slices with the marinade ingredients. Mix well and let it sit for at least 15 minutes.

Cooking

  • Heat the cooking oil in a wok or large skillet over medium-high heat. Add the minced garlic and ginger and stir-fry until fragrant (about 30 seconds).
  • Add the marinated beef to the wok and stir-fry until browned. Remove the beef from the wok and set aside.
  • Add the water spinach to the wok and stir-fry for 2-3 minutes, or until it wilts slightly.
  • Return the beef to the wok. Add the soy sauce, oyster sauce, cornstarch, and sesame oil (if using). Stir-fry until the sauce thickens and coats the beef and water spinach.
  • Season with salt and pepper to taste. Serve hot with steamed rice.

Notes

Slice the beef thinly against the grain for more tenderness. Make sure the wok or skillet is hot enough before adding the ingredients to achieve that nice stir-fry flavor. Feel free to add other vegetables like bell peppers or carrots for more color and nutrition. Adjust seasonings to your personal taste, especially the soy sauce and oyster sauce for saltiness.
