  • 250 g button mushrooms, sliced
  • 3 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1 small piece ginger, minced (optional) you can omit if desired
  • 2 stalks scallions, finely chopped (for garnish)
  • 2 tablespoons soy sauce adjust to taste
  • 1 tablespoon oyster sauce (optional) for additional flavor
  • 2 tablespoons cooking oil for stir-frying
  • to taste black pepper
  • to taste salt

Instructions
 

Preparation

  • Clean and slice the mushrooms. Pat them dry with a paper towel.

Cooking

  • Heat the cooking oil in a wok or large skillet over medium-high heat. Add garlic and ginger (if using) and stir-fry for about 30 seconds.
  • Add the mushrooms and stir-fry for 3-5 minutes.
  • Push the mushrooms to one side of the pan, pour in the beaten eggs, and cook until they are set but still moist.
  • Mix the eggs and mushrooms together, then add soy sauce, oyster sauce (if using), salt, and black pepper. Stir-fry everything for another minute.

Serving

  • Garnish the dish with scallions and serve hot.

Notes

Ensure the mushrooms are dry before stir-frying to get a nice texture. Feel free to adjust the amount of soy sauce and oyster sauce according to your taste preferences. Use fresh scallions for added crunch and flavor. If you have leftovers, let the dish cool completely and store it in an airtight container in the refrigerator for 2-3 days.
