  • 1 tablespoon rice vinegar Provides tanginess.

  • 1 teaspoon red pepper, sliced Adds a little heat.
  • 1/2 teaspoon sesame seeds For garnish.

Preparation

  • Prepare your ingredients by chopping and readying them for cooking.

Cooking

  • Heat a wok or large skillet over medium-high heat with oil until it shimmers.
  • Add shrimp in a single layer and cook for about 2 to 3 minutes until pink and opaque. Remove and set aside.
  • In the same pan, add minced garlic and sauté for around 30 seconds until fragrant.
  • Add sliced cucumber and stir-fry for about 2 to 3 minutes until tender-crisp.
  • Return the shrimp to the pan along with any juices and mix.
  • Whisk together the soy sauce, rice vinegar, sesame oil, sugar, and red pepper in a small bowl.
  • Pour the sauce over the shrimp and cucumbers, stirring to coat.
  • Cook for another minute or two until heated through and season with salt and pepper to taste.
  • Sprinkle sesame seeds on top as a garnish.
  • Serve immediately while hot.

Notes

Quality matters: Always opt for the freshest ingredients. Don’t overcrowd the pan when cooking. Garnishes like fresh herbs can elevate the dish.
