  • 1 pound shrimp, peeled and deveined
  • 1 pound asparagus, trimmed
  • 8 ounces cremini mushrooms, sliced
  • 4-6 cloves garlic, peeled Mince before cooking
  • 2 tablespoons olive oil For stir-frying
  • 1 tablespoon soy sauce (or tamari for gluten-free) Flavor enhancer
  • 1 teaspoon black pepper For seasoning
  • to taste Salt
  • 1 tablespoon butter (optional) For added richness

Instructions
 

Preparation

  • Wash and trim the asparagus.
  • Slice the mushrooms.
  • Peel and devein the shrimp.
  • Mince the garlic.

Cooking

  • Heat olive oil in a large skillet or wok over medium-high heat.
  • Add the garlic and stir-fry for about 30 seconds until fragrant.
  • Add mushrooms and asparagus to the skillet, stir-fry for 3-5 minutes until asparagus is slightly tender-crisp.
  • Add the shrimp, stir-fry for another 2-3 minutes until shrimp is pink and cooked through.
  • Season with soy sauce, black pepper, and salt to taste. If using, add butter during the last minute of cooking and stir to combine.

Serving

  • Serve immediately over rice or quinoa, or enjoy as is.

Notes

You can serve this dish over a bed of steamed rice or fluffy quinoa. Garnish with sesame seeds or fresh herbs for extra flavor. Store leftovers in an airtight container for up to 2-3 days in the refrigerator. Reheat in a skillet over low heat or in the microwave until heated through.
