  • 450 grams shrimp, peeled and deveined
  • 450 grams asparagus, trimmed
  • 225 grams cremini mushrooms, sliced
  • 4-6 cloves garlic, minced
  • 30 milliliters olive oil
  • 15 milliliters soy sauce or tamari
  • 1 teaspoon ground black pepper
  • Salt, to taste
  • 15 grams unsalted butter For richer flavor

Preparation

  • Wash and trim the asparagus, slice the cremini mushrooms, and peel and devein the shrimp. Mince the garlic cloves.

Cooking

  • Heat the olive oil in a large nonstick skillet or wok over medium-high heat.
  • Once hot, add the minced garlic and stir-fry for about 30 seconds until fragrant, avoiding browning.
  • Add the sliced mushrooms and trimmed asparagus, stir-frying for 3 to 5 minutes until the asparagus is bright green and slightly tender-crisp.
  • Add the shrimp and continue stir-frying for an additional 2 to 3 minutes until the shrimp are pink and cooked through.
  • Season with soy sauce or tamari, black pepper, and salt to taste. Add butter during the last minute of cooking and stir well.

Serving

  • Serve hot over steamed rice or quinoa. Add a squeeze of lemon juice or a sprinkle of sesame seeds if desired.

Notes

Prep all ingredients before cooking for efficiency. Consider adding chopped nuts for extra crunch. Adjust soy sauce to your taste.
