Ingredients
  

Main ingredients

  • 1 pound squid, cleaned and cut into rings or bite-sized pieces Make sure to clean the squid well before cooking.
  • 4 pieces scallions, thinly sliced (separate white and green parts)
  • 2-3 pieces red chilies, thinly sliced Adjust to your spice preference.
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced (optional) Optional ingredient; adds flavor.

Sauce ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional) Optional for additional flavor.
  • 1 tablespoon cooking oil For stir-frying.
  • 1 teaspoon cornstarch For thickening the sauce.
  • 1 tablespoon water

Preparation

  • Clean the squid thoroughly and cut into rings or bite-sized pieces; pat dry.
  • (Optional) Marinate the squid with 1 tablespoon soy sauce and a pinch of salt and pepper for 10 minutes.
  • Prepare the sauce by whisking the remaining soy sauce, oyster sauce, cornstarch, and water in a bowl until smooth.

Cooking

  • Heat cooking oil in a wok or skillet over medium-high heat. Add the white parts of the scallions, garlic, and ginger; stir-fry for 30 seconds.
  • Add the squid to the pan and stir-fry for 2-3 minutes until it turns opaque.
  • Add the sliced chilies and the green parts of the scallions; stir-fry for another minute.
  • Pour the prepared sauce into the wok, and stir-fry for about 1 minute until it thickens.
  • Season with salt and pepper, then serve immediately with steamed rice.

Notes

Serve this dish hot right from the wok for the best flavor. Pair it with a side of steamed rice to soak up the delicious sauce. You can also garnish it with extra scallions or chili slices for added color and flavor. If you have leftovers, store them in an airtight container in the refrigerator for 1-2 days.
