Ingredients
  

Crust

  • 1 9-inch graham cracker crust

Filling

  • 5 cups fresh strawberries (divided) 1 cup for cooking, 4 cups for folding into the mixture
  • 1/2 cup granulated sugar
  • 1 1/2 tbsp cornstarch
  • 8 oz cream cheese Ensure cream cheese is at room temperature
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract

Preparation

  • In a medium bowl, blend the cream cheese and sugar until smooth.
  • Whip the heavy cream and vanilla extract until soft peaks form, then fold into the cream cheese mixture.
  • In a small saucepan, combine 1 cup of sliced strawberries, sugar, and cornstarch. Cook over medium heat until thickened.
  • Allow the mixture to cool, then fold in the remaining fresh strawberries.

Assembly

  • Pour the cream cheese mixture into the graham cracker crust and top with the strawberry mixture.
  • Chill in the refrigerator for at least 4 hours before serving.

Notes

Serve chilled with additional fresh strawberries as garnish. Add a dollop of whipped cream for extra sweetness. Best consumed within 2-3 days for optimal freshness. For a sweeter pie, you may adjust the sugar in the cream cheese mixture.
