Pie Crust

  • 0.5 cups Butter, melted Adds richness.

Cream Cheese Filling

  • 8 oz Cream cheese, softened Full-fat recommended for best flavor.
  • 0.5 cups Confectioners’ sugar Adds sweetness.
  • 1 teaspoon Vanilla extract Enhances flavor.

Topping

  • 2 cups Fresh strawberries, sliced Can substitute with other berries.
  • 1 tablespoon Sugar For the glaze.
  • 1 tablespoons Lemon juice Adds tartness and keeps strawberries vibrant.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the crushed graham crackers, melted butter, and sugar until resembling wet sand.
  • Press the graham cracker mixture firmly into the bottom and up the sides of a pie pan. Bake for about 10 minutes, then let it cool completely.
  • In a large mixing bowl, beat the cream cheese, confectioners’ sugar, and vanilla extract until creamy and smooth.
  • Once the crust has cooled, spread the cream cheese filling evenly into the crust.
  • In a small bowl, mix the sugar and lemon juice until the sugar is mostly dissolved. Wash and slice the strawberries and toss them in the glaze.
  • Arrange the glazed strawberries on top of the cream cheese filling.
  • Cover with plastic wrap and refrigerate for at least two hours.

Serving

  • Slice the pie and serve. Enjoy it with vanilla ice cream, whipped cream, or fresh mint for an elegant touch.

Notes

For a crispy crust, bake it just right and let it cool completely. Using room temperature cream cheese improves texture. Consider mixing in blueberries or raspberries for variations. Leftovers can be stored in the fridge for up to three days.
