  • 1 cup shredded rotisserie chicken Store-bought or homemade.
  • 1 cup corn (fresh, canned, or frozen) Try using grilled corn for added flavor.
  • 1/2 cup diced red onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 cup crumbled feta cheese Substitute with goat cheese for a different flavor.
  • 1 lime (juiced)
  • Salt and pepper to taste
  • Olive oil Use for cooking the corn.

Cooking

  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add the corn and cook until slightly charred.

Mixing

  • In a large bowl, combine the cooked rice, shredded chicken, corn, diced red onion, diced tomatoes, chopped cilantro, and crumbled feta cheese.
  • Squeeze lime juice over the mixture.
  • Season with salt and pepper to taste.
  • Toss everything together until well mixed.

Serving

  • Serve warm in a large bowl or individual plates.
  • Enjoy it on its own or with tortilla chips, extra lime wedges, or a dollop of sour cream.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the microwave or enjoy cold. For added flavor, use grilled corn instead of cooked corn and add vegetables like bell peppers or avocados. For vegetarian options, use black beans or chickpeas.
