  • 1 cup sweet corn kernels Fresh, canned, or frozen both work.
  • 1 cup creamy street corn sauce Can prepare sauce in advance.
  • to taste cilantro for garnish Fresh cilantro adds flavor.

Preparation

  • Grill the chicken breasts until they are juicy and have charred edges. Slice after cooking.
  • Prepare the creamy street corn sauce by mixing sweet corn, cream, and seasonings in a bowl.

Assembly

  • In a serving bowl, layer cooked white rice, top with sliced grilled chicken, then drizzle the creamy street corn sauce over the top.
  • Add sweet corn kernels and garnish with fresh cilantro. Serve and enjoy!

Notes

This dish is best enjoyed warm. Extra toppings such as avocado or cheese can be added. Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, warm in the microwave until heated through, adding a splash of water if necessary.
