Ingredients
  

For the Squash

  • 2 pieces Butternut Squash, halved and seeds removed Choose ripe squash for the best flavor.
  • 1 tsp Olive Oil For brushing the squash.
  • Salt and Pepper, to taste For seasoning the squash.

For the Filling

  • 4 cups Fresh Spinach, chopped You can substitute with other greens like kale.
  • 6 slices Bacon, cooked and crumbled Feel free to replace with sausage or turkey bacon.
  • 1 cup Shredded Cheese (cheddar or mozzarella) Experiment with different cheese types.
  • 1 pieces Onion, diced For added flavor.
  • 2 cloves Garlic, minced Enhances the aroma.
  • Optional: Fresh Herbs like thyme or rosemary Elevates the flavors beautifully.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the butternut squashes in half lengthwise and scoop out the seeds. Place cut side up on a baking sheet.
  • Brush the squash halves with olive oil and sprinkle with salt and pepper.

Roasting

  • Roast the squash in the oven for about 30-40 minutes until tender and slightly caramelized.

Cooking the Filling

  • Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate.
  • In the same skillet, add diced onions and sauté until translucent, then add minced garlic and cook for another minute.
  • Add the fresh spinach to the skillet and stir until wilted, about 2-3 minutes.

Mix and Assemble

  • Combine the cooked spinach and onions with crumbled bacon in a bowl. Add shredded cheese and mix well.
  • Scoop out a bit of flesh from the roasted squash and fill each half with the spinach, bacon, and cheese mixture.

Final Baking

  • Return the stuffed squash to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.

Serving

  • Remove from oven, let cool slightly, garnish with fresh herbs if desired, and serve.

Notes

This dish reheats beautifully and can be served with a simple salad or garlic bread. Store leftovers in an airtight container in the refrigerator for up to three days.
