Ingredients
  

Cookie Dough

  • 1 cup unsalted butter, softened Make sure your butter is softened for easy mixing.
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 1 cup shredded coconut Can be omitted, but may affect signature flavor.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Filling

  • 1/4 cup caramel sauce
  • 1 cup chocolate chips Experiment with different types of chocolates.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the vanilla extract.
  • In another bowl, combine the flour, baking soda, and salt. Gradually blend this dry mixture into the creamed mixture.
  • Fold in the shredded coconut.
  • Take a small portion of the dough, flatten it, and place a small amount of caramel sauce and chocolate chips in the center.
  • Fold the dough over to enclose the filling.

Baking

  • Place the stuffed cookies on a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until lightly golden.
  • Allow cookies to cool before serving.

Notes

Store the cookies in an airtight container at room temperature for up to one week. For longer storage, freeze them but separate layers with parchment paper to prevent sticking. Don’t overbake the cookies; they should be lightly golden for a soft texture.
