Ingredients
  

For the Chicken

  • 1 lb boneless chicken breast, cut into bite-sized pieces Chicken breast is lean and perfect for absorbing flavors.
  • 1/2 cup cornstarch Gives the chicken a delightful crispy coating.
  • 2 large eggs, beaten Helps the cornstarch stick to the chicken.
  • 1/2 cup vegetable oil for frying Essential for frying the chicken to golden perfection.

For the Sauce

  • 1/2 cup ketchup Base of the sweet sauce.
  • 1/3 cup rice vinegar Gives a zesty tang.
  • 1/3 cup sugar Adds sweetness.
  • 2 tbsp soy sauce Adds umami depth.
  • 1 tbsp cornstarch mixed with 2 tbsp water Helps thicken the sauce.

For the Vegetables

  • 1 red bell pepper, diced Adds color and sweetness.
  • 1 yellow bell pepper, diced Complements the red pepper.
  • 1 small red onion, diced Adds flavor.
  • 1/2 cup pineapple chunks (optional) Enhances the tropical flavor.

Instructions
 

Preparation

  • Coat the chicken pieces in cornstarch, then dip in beaten eggs.
  • Heat vegetable oil in a large skillet over medium-high heat.

Cooking

  • Fry the chicken until golden brown and crispy, about 5-7 minutes.
  • Remove the chicken and set aside on a paper towel to drain.
  • In the same skillet, sauté diced red bell pepper, yellow bell pepper, and red onion for 3-4 minutes.
  • If using, add pineapple chunks during the last minute of sautéing.
  • In a separate saucepan, combine ketchup, rice vinegar, sugar, and soy sauce, and bring to a simmer.
  • Add cornstarch and water mixture while stirring, and cook until sauce thickens.
  • Add crispy chicken and sautéed veggies back into the sauce, gently tossing to coat.
  • Garnish with chopped green onions before serving.

Serving

  • Serve Sweet and Sour Chicken over a bed of fluffy rice.

Notes

For a crispier chicken, avoid overcrowding the pan while frying. You can replace chicken with shrimp or tofu for a different protein option.
