For the Casserole

For the Topping

  • 1 cup Packed Brown Sugar For sweetness and crunch.
  • 3/4 cup All-Purpose Flour Helps create the crumbly topping.
  • 1 1/2 cups Pecans, chopped Provides a crunchy texture.
  • 5 tablespoons Butter, softened For richness in the topping.

Instructions
 

Preparation

  • Scrub the sweet potatoes under cool running water, dry them off, and prick holes all over with a fork.
  • Place the sweet potatoes on a baking sheet and bake at 425°F for about an hour until fork-tender.
  • Let them cool slightly before handling.

Baking

  • Preheat your oven to 350°F.
  • Grease a 9x13-inch baking dish with butter or cooking spray.
  • Scoop out the flesh of the sweet potatoes into a large bowl and discard the skins.
  • Add brown sugar, beaten eggs, salt, softened butter, evaporated milk, vanilla extract, cinnamon, cloves, and nutmeg to the bowl.
  • Mix until smooth using a potato masher or an electric mixer on low.
  • Spread the sweet potato mixture evenly in the greased baking dish.
  • In a medium bowl, mix the remaining brown sugar with flour and cut in softened butter until crumbly.
  • Stir in chopped pecans and sprinkle the topping over the sweet potato mixture.
  • Bake for about 30 minutes until heated through.
  • Broil on low for the last 1½ to 2 minutes until golden brown.
  • Allow to cool slightly before serving.

Notes

For an extra creamy casserole, make sure the sweet potatoes are well-mashed without lumps. Try adding mini marshmallows for extra texture before broiling.
