Ingredients
  

Steak and Seasoning

  • 2 lbs Bottom round or top round steak, pounded to 1/2 inch thick
  • To taste Kosher salt
  • To taste Fresh ground black pepper
  • 1/2 cup All-purpose flour For dredging

Cooking Ingredients

  • 2-3 tablespoons Vegetable oil For browning the steak
  • 1 Yellow onion, sliced into half-moons
  • 3 Carrots, peeled and cut into 1-inch chunks
  • 3 cloves Garlic, minced
  • 2 tablespoons Tomato paste
  • 2 cups Low-sodium beef broth
  • 2 cans (14.5 ounces each) Diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dried marjoram Can substitute with oregano
  • 1/2 teaspoon Dried thyme
  • 1/4 teaspoon Paprika

Instructions
 

Preparation

  • Season your pound of steak generously with kosher salt and fresh ground black pepper. Dredge it in the flour, shaking off any excess.

Cooking

  • In your skillet, heat the vegetable oil over medium-high heat. Add the steak and let it brown for about 4-5 minutes on each side.
  • Remove the steak from the skillet and set it aside.
  • Using the same skillet, toss in the sliced onion, carrot chunks, and minced garlic. Sauté until they start to soften, about 5 minutes.
  • Stir in the tomato paste and cook for a minute. Then add the beef broth, diced tomatoes, Worcestershire sauce, marjoram, thyme, and paprika.
  • Return the browned steak to the skillet, making sure it’s covered by the sauce. Bring it to a gentle boil and cover with a lid.
  • Reduce the heat to low and let the steak simmer for about 1.5 to 2 hours.
  • Optionally, remove the lid in the last 30 minutes to thicken the sauce if desired.

Serving

  • Ladle the steak and sauce onto plates, and spoon some of the veggie goodness over the top.

Notes

For added flavor, consider adding a splash of red wine to the broth before simmering. Leftovers taste even better the next day.
