  • 1 pound lean ground beef Can substitute with ground turkey or chicken for a lighter version.
  • 4-6 medium Russet potatoes Can substitute with sweet potatoes.
  • 1 packet (1 oz) taco seasoning See tips for homemade seasoning options.
  • ½ cup water
  • 1 cup sharp cheddar cheese, shredded Experiment with different cheeses for varied flavors.
  • ½ cup sour cream
  • ¼ cup green onions, chopped
  • ½ cup fresh tomatoes, diced

Instructions
 

Preparation

  • Wash and scrub the potatoes thoroughly, then pierce them all over with a fork.
  • Bake the potatoes in a 400°F oven for 45-50 minutes until fork-tender.

Cooking

  • While the potatoes are baking, heat a large skillet over medium heat.
  • Cook the ground beef until browned and no longer pink, then drain excess grease.
  • Stir in taco seasoning and water, mixing well. Let it simmer for 5 minutes until the mixture thickens.

Assembly

  • Once potatoes are done, slice them open lengthwise and fluff the insides with a fork.
  • Generously spoon the seasoned beef over each potato.
  • Top with shredded cheese, sour cream, green onions, and diced tomatoes.

Serving

  • Serve immediately while hot and cheese is melty.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the oven.
