Ingredients
  

Main ingredients

  • 8 oz penne pasta
  • 1 lb ground beef or turkey Choose lean meat for a healthier dish.
  • 1 packet taco seasoning Use your favorite brand.
  • 1 cup diced tomatoes
  • 1 cup corn Canned or frozen works.
  • 1 cup black beans, drained and rinsed Good source of protein.
  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to mix cheeses.
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped cilantro for garnish Optional, for serving.

Instructions
 

Preparation

  • Cook the penne pasta according to package instructions; drain and set aside.
  • In a large skillet, brown the ground beef or turkey over medium heat. Drain any excess fat.

Cooking

  • Add taco seasoning and diced tomatoes to the meat; stir to combine and simmer for 5 minutes.
  • Stir in corn and black beans, and simmer for another 2-3 minutes.
  • Add in the cooked pasta and mix well.
  • Remove from heat and stir in shredded cheese and sour cream until melted and well combined.
  • Season with salt and pepper to taste.
  • Garnish with chopped cilantro before serving.

Notes

Best served warm. Top with extra cheese, salsa, or avocado. Pairs well with tortilla chips or a side salad. Storage: store leftovers in an airtight container in the refrigerator for up to 3 days.
