  • 1 can diced tomatoes Adds a lovely base and a touch of acidity.
  • 1 can green chiles Brings a slight kick.
  • 8 oz pasta Shell pasta works best for holding the sauce.
  • 1 cup shredded cheese Cheddar or Monterey Jack work beautifully.
  • 1 cup water Helps cook the pasta evenly.
  • 1 packet taco seasoning Store-bought or homemade.
  • to taste salt and pepper Adjust according to preference.

Preparation

  • Preheat your stove and gather all your ingredients.
  • Start by laying out all your ingredients for ease.

Cooking

  • In a large pot, heat some oil over medium heat.
  • Add the ground beef and brown it, breaking it up with a spoon for about 5-7 minutes. Drain excess fat.
  • Add in the diced tomatoes and green chiles, stirring them together and letting them simmer for a couple of minutes.
  • Sprinkle in the taco seasoning, stirring it all together for about a minute.
  • Pour in the water and stir to combine.
  • Add your pasta, ensuring it's fully submerged in the liquid.
  • Bring to a rolling boil, then cover and reduce heat to low.
  • Cook for about 10-12 minutes, stirring occasionally, until the pasta is tender.
  • Turn off the heat and stir in the shredded cheese until melted.
  • Add salt and pepper to taste.
  • Serve into bowls and enjoy!

Notes

Consider sautéing some chopped onion and garlic before browning the beef for added flavor. Serve with a side salad or tortilla chips for crunch.
