  • 8 oz Pasta Use your favorite type.
  • 1 lb Ground beef or turkey Choose based on your preference.
  • 1 packet Taco seasoning Store-bought or homemade.
  • 1 can Diced tomatoes Undrained.
  • 1 can Black beans Drained and rinsed.
  • 1 cup Corn
  • 2 cups Chicken or vegetable broth
  • to taste Salt and pepper Adjust according to preference.

Toppings

  • 1 cup Shredded cheese (cheddar or Mexican blend) For topping.
  • Optional toppings: sour cream, diced onions, cilantro Customize your taco pasta.

Preparation

  • Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.

Cooking

  • In a large skillet over medium heat, brown the ground beef or turkey, breaking it apart as it cooks for about 5-7 minutes.
  • Add the taco seasoning to the browned meat and stir well to coat.
  • Pour in the diced tomatoes with their juices and mix thoroughly.
  • Stir in the black beans and corn, combining everything well.
  • Add the chicken or vegetable broth, stirring to combine, and bring the mixture to a gentle simmer for about 5-7 minutes.
  • Add the cooked pasta to the skillet and gently stir until all the pasta is coated in the mixture, cooking for another couple of minutes.
  • Top the pasta with the shredded cheese and cover the skillet for a minute or two until the cheese melts.
  • Season with salt and pepper as needed before serving.

Serving

  • Spoon the Taco Pasta into bowls and top with desired toppings like sour cream, diced onions, and cilantro before serving.

Notes

To enrich the dish, consider stirring in cream cheese for creaminess. For a crispy edge, place in a casserole dish and broil until golden.
