Ingredients
  

For the Rice

  • 1 cup uncooked white rice Can use brown rice, but cooking time differs.
  • 2 cups water or chicken broth Use chicken broth for more flavor.

For the Meat

  • 1 lb ground beef or turkey Turkey for a lighter option.
  • 1 packet taco seasoning About 1 oz.
  • 2 tablespoons olive oil For cooking the meat.

For Toppings

  • 1 can black beans 15 oz, drained and rinsed.
  • 1 cup corn Frozen or canned.
  • 1 cup diced tomatoes Fresh or canned.
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa For topping.
  • to taste salt and pepper
  • fresh cilantro and lime wedges Optional for garnish.

Instructions
 

Preparation of Rice

  • Rinse the rice under cold water until the water runs clear.
  • In a medium pot, bring 2 cups of water or chicken broth to a boil. Add the rice, then reduce the heat to low, cover the pot, and let it simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.

Cooking the Meat

  • While the rice cooks, heat olive oil in a large skillet over medium heat.
  • Add the ground beef or turkey to the skillet. Brown the meat, breaking it up with a spatula, until fully cooked.
  • Drain any excess fat from the meat.
  • Add the taco seasoning to the meat along with a splash of water (about 2-3 tablespoons). Stir well and let it simmer for 5 minutes.

Assembly

  • Once the rice is cooked, fluff it with a fork.
  • To assemble, start with a base of rice in each bowl. Top with the seasoned meat, black beans, corn, diced tomatoes, shredded lettuce, and cheddar cheese.
  • Finish each bowl with a spoonful of salsa and any optional garnishes like cilantro and lime wedges.

Notes

Store any leftovers in an airtight container in the refrigerator. They will stay fresh for up to three days. Reheat in the microwave when ready to eat. To make this dish even quicker, use pre-cooked rice or microwaveable rice packets. For a vegetarian option, substitute the meat with additional black beans or lentils.
