Ingredients
  

Main Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3 cups cooked rice Use seasoned rice for extra flavor.
  • 1 can (15 oz) black beans, drained
  • 1 cup corn kernels (canned or frozen)
  • 1 cup diced tomatoes
  • 1 1/2 cups shredded cheddar cheese Can substitute for vegan cheese if desired.
  • 2 pieces green onions, sliced For garnish.
  • to taste Fresh cilantro, chopped For garnish.

Instructions
 

Preparation

  • In a skillet, brown ground beef. Drain excess fat and stir in taco seasoning with 1/4 cup water. Simmer for 5 minutes.

Assembly

  • In a greased baking dish, spread cooked rice. Layer with seasoned beef, black beans, corn, and tomatoes.
  • Sprinkle cheddar cheese evenly over the top.

Baking

  • Bake at 375°F (190°C) for 15–20 minutes, until cheese is melted and bubbly.

Serving

  • Top with green onions and fresh cilantro. Serve hot!

Notes

Taco Rice Casserole is best served hot and pairs well with a side salad, tortilla chips, or your favorite dipping sauces. Consider serving it with sour cream, salsa, or guacamole on the side. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
