Ingredients
  

For the tortilla bowls

  • 2 large flour tortillas Can use corn tortillas if preferred.
  • 1 spray olive oil spray For spraying the tortillas.

For the salad

  • 4 cups romaine lettuce, chopped Adds crunch and nutrients.
  • 1 cup black beans, canned, rinsed and drained Full of protein.
  • 1 cup cherry tomatoes, halved Burst with flavor.
  • 1/2 cup corn kernels, cooked or canned Gives a delightful crunch.
  • 1 avocado, sliced Adds creaminess.
  • 1/4 cup shredded cheese, cheddar or cotija For a rich flavor.
  • 1/4 cup salsa Brings a zesty kick.
  • 1 serving tortilla chips, broken into pieces For topping.
  • 2 tablespoons sour cream or Greek yogurt Adds a creamy texture.
  • 1 tablespoon lime juice For a refreshing brightness.
  • 1 tablespoon olive oil Boosts flavor.
  • 1/2 teaspoon taco seasoning Spice blend for seasoning.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly spray both sides of the tortillas with olive oil. Press them into oven-safe bowls to form a bowl shape.
  • Bake for 10-12 minutes until crisp and golden. Let cool slightly before removing from bowls.

Assembly

  • In a large bowl, combine the chopped romaine lettuce, black beans, cherry tomatoes, corn, and avocado slices.
  • In a smaller bowl, whisk together the sour cream or Greek yogurt, lime juice, olive oil, and taco seasoning until smooth.
  • Fill the cooled tortilla bowls with the salad mixture. Drizzle with the dressing and top with salsa, cheese, and crushed tortilla chips.

Serving

  • Serve immediately and enjoy your vibrant and satisfying taco salad!

Notes

To achieve crispy tortilla bowls, spray them evenly with olive oil. Don't pack the salad too tightly in the bowls for a delightful crunch. Feel free to add extra cheese if desired.
