Ingredients
  

For the Soup

  • 1 lb Ground beef Can substitute with ground turkey or keep vegetarian with lentils.
  • 1 can Black beans (15 oz)
  • 1 can Kidney beans (15 oz)
  • 1 can Corn (15 oz)
  • 1 can Diced tomatoes (15 oz)
  • 1 packet Taco seasoning
  • 1 medium Onion, chopped
  • 2 cups Beef broth Can substitute with vegetable broth for vegetarian option.
  • To taste Salt and pepper

Cooking Steps

  • Heat a large pot over medium heat and add ground beef, cooking until browned (about 5 to 7 minutes).
  • Add chopped onions to the pot and sauté until soft and translucent (about 3 to 4 minutes).
  • Stir in black beans, kidney beans, corn, and diced tomatoes. Combine all ingredients.
  • Sprinkle in taco seasoning and stir everything to combine.
  • Pour in beef broth and bring mixture to a gentle boil.
  • Reduce heat and let soup simmer for about 20 minutes.
  • After 20 minutes, taste the soup and add salt and pepper as needed.
  • Ladle soup into bowls and top with optional garnish such as shredded cheese, sour cream, diced avocado, or fresh cilantro.
  • Serve and enjoy your delicious Taco Soup!

Notes

For extra creaminess, add a splash of heavy cream or cream cheese before serving. The soup freezes well; cool completely before transferring to freezer-safe containers. Keep extra toppings on hand for added flavor.
