Ingredients
  

Pasta and Filling

  • 12 pieces Jumbo pasta shells
  • 1 pound Ground beef or turkey You can use turkey or a veggie substitute if preferred.
  • 1 packet Taco seasoning
  • 1 cup Salsa Choose your favorite type.
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 1 can Black beans, drained and rinsed
  • 1 cup Corn Frozen or canned.

For Serving

  • Sour cream For serving.
  • Green onions, chopped For garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Bring a pot of water to a boil and cook the jumbo pasta shells according to the package instructions until al dente, about 8-10 minutes. Drain and set aside.

Cooking the Filling

  • In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess grease.
  • Add the taco seasoning, salsa, black beans, and corn to the meat. Stir and let the mixture simmer for about 5 minutes.

Assembly

  • Stuff each pasta shell with the meat mixture and place them in a baking dish.
  • Sprinkle shredded cheese on top of the stuffed shells.

Baking

  • Cover the baking dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes until the cheese is golden and bubbly.

Serving

  • Remove from the oven, let cool for a few minutes, then serve hot, garnished with sour cream and chopped green onions.

Notes

Consider adding cilantro or bell peppers for extra flavor. For more heat, use spicy salsa or jalapeños. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
