Sauces and Seasonings

  • 3 tablespoons fish sauce Adds a salty, umami flavor.
  • 2 tablespoons soy sauce Compliments fish sauce wonderfully.
  • 2 tablespoons oyster sauce Adds a sweet and savory touch.
  • 1 tablespoon brown sugar Balances the flavors beautifully.
  • 2 tablespoons lime juice Brings bright acidity.
  • 2 tablespoons vegetable oil For cooking the chicken.

Preparation

  • In a small bowl, combine the fish sauce, soy sauce, oyster sauce, brown sugar, and lime juice. Whisk until the sugar dissolves completely.

Cooking

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add minced garlic and stir for about 30 seconds until fragrant.
  • Toss in the bite-sized chicken pieces and cook until golden brown, about 6-8 minutes.
  • Pour the prepared sauce over the chicken and add diced chilies.
  • Stir in Thai basil and cilantro; cook for an additional 2-3 minutes until the basil wilts.

Serving

  • Garnish with chopped green onions and serve hot over a bed of jasmine rice.

Notes

For extra crispy chicken, refrigerate pieces for about 30 minutes before cooking. Adjust heat by adding more chilies or a splash of sriracha. If Thai basil is unavailable, regular basil will work in a pinch.
