Ingredients
  

For the sandwich

  • 4 slices Rye bread
  • 8 oz Corned beef Tender and salty
  • 2 slices Swiss cheese Can add more for extra cheesiness
  • 1/2 cup Sauerkraut Drained and squeezed to remove excess liquid
  • 2 tbsp Thousand island dressing Adjust to taste
  • 2 tbsp Butter Softened for easy spreading

Instructions
 

Preparation

  • Preheat your skillet on medium heat.
  • Butter one side of each slice of rye bread evenly.
  • Layer corned beef on the unbuttered side of one slice.
  • Top with sauerkraut, ensuring an even spread.
  • Place Swiss cheese atop the sauerkraut.
  • Drizzle thousand island dressing over the cheese.
  • Cap it with another slice of rye bread, buttered side facing up.

Cooking

  • Grill the sandwich in the hot skillet until golden brown, about 3-4 minutes.
  • Gently flip to grill the other side until crispy and the cheese has melted.
  • Slice the sandwich and serve it warm with a smile!

Notes

For extra crunch, consider adding sliced pickles inside the sandwich. Use whole grain bread and lower-fat cheese for a lighter version. Store leftovers in an airtight container in the refrigerator.
