Ingredients
  

For the Soup

  • 1 lb Italian sausage The star of the soup, adds depth and heartiness.
  • 2 cups Tomatoes Fresh or canned; crush whole tomatoes if using them.
  • 6 cups Chicken broth Base for the soup.
  • 9 oz Fresh cheese tortellini Tender pillows that cook quickly.
  • 2 cups Arugula Adds a peppery bite and freshness.
  • 1 tsp Basil Dried herb for seasoning.
  • 1 tsp Oregano Dried herb for seasoning.
  • to taste Salt and pepper For seasoning.

For the Salad

  • 4 cups Mixed greens Your choice of greens.
  • 1 cup Cherry tomatoes Optional addition to the salad.
  • 1 cucumber Cucumber Sliced for freshness.
  • 3 tbsp Light vinaigrette For dressing the salad.

For Serving

  • 1 loaf French baguette For dipping in soup.
  • 1/2 cup Soft creamy butter For spreading on baguettes.

Instructions
 

Cooking the Soup

  • Heat a large pot over medium heat and add the Italian sausage. Cook until browned, stirring occasionally.
  • Add the tomatoes to the pot. Crush them if using whole ones and cook until they soften and release their juices.
  • Pour in the chicken broth and bring the mixture to a gentle simmer.
  • Add the fresh cheese tortellini to the pot and cook for 3-5 minutes until they float to the surface.
  • Stir in a generous handful of arugula until wilted.
  • Season the soup with basil, oregano, salt, and pepper. Adjust seasoning to taste.

Preparing the Salad

  • Toss together mixed greens, cherry tomatoes, and cucumber in a bowl, then drizzle with light vinaigrette.

Serving

  • Slice the French baguette and spread soft creamy butter on each piece.
  • Ladle the soup into warm bowls, serve the salad on the side with the baguettes.

Notes

If you desire a creamier soup, consider adding a splash of heavy cream just before serving. Leftovers can be stored in an airtight container for about 3 days in the fridge or frozen for longer storage.
