Cooking Steps

  • In a large pot, heat the olive oil over medium heat until warm but not smoking.
  • Brown the beef chunks on all sides for about 5-7 minutes, then remove and set aside.
  • In the same pot, sauté the chopped onion and minced garlic until softened, for about 3-4 minutes.
  • Stir in the tomato paste and let it cook for a minute.
  • Pour in the beef broth, stirring and scraping the bottom of the pot.
  • Return the browned beef to the pot along with the sliced carrots, diced potatoes, dried thyme, and dried rosemary. Season with salt and pepper.
  • Bring to a gentle boil, then reduce heat to low and cover. Simmer for 90 to 120 minutes, stirring occasionally.
  • Check the beef for doneness; it should be fork-tender. Adjust seasoning if necessary.
  • Serve in hearty bowls and enjoy the warmth that comes with this dish.

Notes

For a thicker stew, mix a tablespoon of cornstarch with cold water and stir in during the last 15 minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days.
