  • 4-5 lbs corned beef brisket Look for a good quality brisket, packed with seasoning.
  • 1 head cabbage, cut into wedges Don’t skip the cabbage; it caramelizes beautifully.
  • 4 pieces carrots, peeled and chopped Adds sweetness and bright color.
  • 1 lb baby potatoes, halved These are creamy and tender once cooked.
  • 4 cups beef broth Keeps everything moist and flavorful.
  • 1 medium onion, quartered A must for that sweet and savory base.
  • 2-3 cloves garlic, minced For added flavor.
  • 2 teaspoons mustard seeds Adds depth of flavor.
  • 2 teaspoons black peppercorns Brings a gentle heat.
  • 2 leaves bay leaves For an aromatic quality.
  • to taste salt Adjust to personal preference.

Instructions
 

Preparation

  • Gather all your ingredients and ensure your corned beef brisket is thawed. Rinse under cold water if you prefer a milder flavor.
  • Use a big Dutch oven or large stockpot for cooking.

Cooking

  • Place the brisket in the bottom of the pot.
  • Add quartered onion, minced garlic, mustard seeds, black peppercorns, and bay leaves on top of the brisket.
  • Pour in the beef broth to cover the brisket.
  • Bring to a boil on high heat.
  • Once boiling, lower the heat and let it simmer, covered, for about 2.5 to 3 hours.
  • About 30 minutes before serving, add in chopped carrots and halved baby potatoes.
  • In the last 15 minutes, add cabbage wedges on top. No need to stir.
  • Check if the meat is fork-tender after about 3 hours of cooking.

Serving

  • Let the corned beef rest for a few minutes before slicing.
  • Slice the brisket against the grain and serve hot with vegetables, ladling some of the broth over the top.

Notes

If you have leftovers, let them cool before storing in an airtight container. They last a few days in the fridge. Reheat gently with a splash of broth to keep the meat moist.
