  • Salt to taste salt and pepper Adjust seasoning to taste.
  • 2 tablespoons olive oil For browning the beef.

Instructions
 

Preparation

  • Chop your vegetables, garlic, and beef.
  • Heat olive oil over medium heat in a large pot.

Cooking

  • Brown the beef chunks in a single layer for 5-7 minutes.
  • Add chopped onion and minced garlic, cooking until onions are translucent.
  • Incorporate sliced carrots and diced potatoes.
  • Pour in beef broth and stout beer (if using), scraping the bottom of the pot.
  • Add tomato paste, thyme, and rosemary, stirring to combine.
  • Season with salt and pepper to taste.
  • Bring to a gentle boil, then reduce heat to low.
  • Cover and let simmer for about 1.5 to 2 hours, until the beef is tender.
  • Taste the stew and adjust seasoning if necessary.
  • Serve warm in bowls.

Notes

For a thicker stew, consider adding a cornstarch slurry at the end.
