Tuscan Shrimp Orzo

Ingredients
  

Pasta and Shrimp

  • 8 oz orzo pasta Gives a lovely texture to the dish.
  • 1 lb shrimp, peeled and deveined Adds seafood flavor.

Vegetables

  • 2 cups cherry tomatoes, halved Brings brightness and sweetness.
  • 1 cup baby spinach Adds color and nutrition.
  • 3 cloves garlic, minced Enhances heartiness.

Sauce Ingredients

  • 1/2 cup chicken broth Creates the base of the sauce.
  • 1/2 cup heavy cream Makes the dish creamy.
  • 1/4 cup Parmesan cheese, grated Adds flavor and richness.
  • 2 tbsp olive oil For sautéing.
  • to taste Salt and pepper For seasoning.

Garnish

  • Fresh basil Optional, for garnish.

Instructions
 

Cooking the Orzo

  • Bring a large pot of salted water to a boil. Cook the orzo pasta until al dente, about 8-10 minutes, stirring occasionally. Drain and set aside.

Sautéing Garlic

  • Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Cooking Shrimp

  • Add shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until pink and cooked through. Remove from skillet.

Sautéing Tomatoes

  • In the same skillet, add halved cherry tomatoes and sauté for about 3-4 minutes until soft.

Creating Sauce

  • Pour chicken broth into the skillet and simmer. Stir in heavy cream and let thicken for a couple of minutes.

Adding Spinach

  • Add baby spinach and stir until wilted, about 2 minutes.

Combining Ingredients

  • Reintroduce shrimp and cooked orzo to the skillet. Stir to combine. If too thick, add more chicken broth or cream.

Finishing Touch

  • Sprinkle Parmesan cheese on top and stir until melted.

Serving

  • Plate and garnish with additional Parmesan and fresh basil before serving.

Notes

Consider using fresh herbs for flavor, and add red pepper flakes for heat. Keep an eye on the shrimp to avoid overcooking.
