  • 4 large large potatoes Baked and mashed
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup butter Melted
  • 2 cups shredded cheddar cheese Plus extra for topping
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions Plus extra for garnish
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Wash and pierce the potatoes with a fork, then bake them for about 1 hour until tender.
  • Once baked, let them cool slightly, then scoop the insides into a large bowl.
  • Mash the potatoes with sour cream, milk, butter, and season with salt and pepper.
  • Stir in shredded cheddar cheese, bacon bits, and green onions.

Baking

  • Pour the mixture into a greased baking dish, and top with extra cheese if desired.
  • Bake for an additional 25-30 minutes until heated through and bubbly.

Notes

For extra flavor, try adding garlic powder or shredded mozzarella cheese. You can make it ahead of time and refrigerate it before baking. Just add a few extra minutes to the baking time when you’re ready to serve. If you prefer a healthier version, consider using Greek yogurt instead of sour cream.
