  • 4 large large russet potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Boil the potatoes in salted water until tender.
  • Drain and let cool slightly, then peel and mash in a bowl.
  • Stir in sour cream, milk, melted butter, and half of the cheese. Season with salt and pepper.
  • Spoon the potato mixture into a large casserole dish.

Baking

  • Top with remaining bacon, cheese, and green onions.
  • Bake for 25-30 minutes or until heated through and cheese is melted.

Notes

Serve warm with a fresh salad or your favorite protein. Can customize by adding ingredients like broccoli or different cheeses. Leftovers last about 3 to 4 days in the refrigerator. For lighter version, substitute Greek yogurt for sour cream and use low-fat milk.
