Preparation

  • Preheat your oven to 350°F (175°C).
  • Wash potatoes thoroughly and cut into quarters.
  • Place potatoes in a large pot of salted water and bring to a boil; cook until fork-tender (15-20 minutes).
  • Drain potatoes and mash until smooth.

Mixing

  • Stir in sour cream, shredded cheese, crumbled bacon, sliced green onions, and season with salt and pepper.
  • If desired, add milk for a creamier texture.

Baking

  • Lightly grease a large casserole dish and spoon the mixture into it, spreading evenly.
  • Top with remaining bacon and shredded cheese.
  • Bake in preheated oven for 25-30 minutes until bubbly and golden.
  • Let sit for 5 minutes before serving.

Notes

For a crispier top, broil the casserole for the last few minutes of baking. Using room-temperature ingredients helps in better mixing. Feel free to experiment with garlic or ranch seasoning for added flavor. Serve with fresh salad or grilled meats.
