Batter Ingredients

Preparation

  • Start by cleaning the shrimp and scallops. Ensure the shrimp is peeled and deveined.
  • Split the lobster tails in half for presentation and flavor.
  • Cut fish fillets or calamari into small bite-sized pieces.

Batter Preparation

  • In a bowl, combine flour, cornstarch, salt, and pepper.
  • Gradually whisk in cold sparkling water until smooth.

Cooking

  • Heat oil in a deep pan over medium-high heat. Dip seafood bites into the batter and fry until golden brown, about 3-4 minutes, then drain on paper towels.
  • Brush lobster tails and cleaned shrimp with garlic butter, then grill on medium for about 4-5 minutes per side.
  • Blanch broccoli florets in boiling water for 2 minutes, then transfer to an ice water bath.

Serving

  • Arrange all cooked seafood and veggies on a large platter.
  • Serve with soy or sweet chili sauce for dipping.

Notes

Pat seafood dry before grilling for better results. Store leftovers in an airtight container and reheat at 350°F for about 10 minutes.
