Ingredients
  

For the batter

  • 2 tbsp ground flax seeds For binding
  • 4 tbsp water To mix with flax seeds
  • 2 baking apples (peeled, cored, and cubed) Choose sweet varieties
  • 2 tbsp lemon juice To prevent browning of apples
  • 45 g vegan butter (melted) Provides richness
  • 150 g plant milk Use your favorite type
  • 2 tbsp granulated sugar For sweetness
  • 195 g plain white flour Base for the fritters
  • 2 tsp baking powder For leavening
  • 3/4 tsp ground cinnamon Spice for flavor
  • 1/4 tsp ground nutmeg Additional spice
  • 1 pinch ground cardamom Adds warmth to the flavor
  • 1/2 tsp fine sea salt Enhances flavor
  • Vegetable oil for frying Enough for frying

For the glaze

  • 200 g icing sugar For a sweet glaze
  • 1/4 tsp ground cinnamon For flavor in glaze
  • 3 tbsp plant milk To mix the glaze

Instructions
 

Preparation

  • In a small bowl, mix ground flax seeds with water and let sit for 5 minutes to thicken.
  • In a large bowl, combine the cubed apples with lemon juice.
  • Add melted vegan butter, plant milk, and sugar to the apples and mix well.
  • In another bowl, whisk together flour, baking powder, ground cinnamon, nutmeg, cardamom, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Cooking

  • Heat vegetable oil in a frying pan over medium heat.
  • Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
  • Remove fritters and let them drain on paper towels.
  • For the glaze, mix icing sugar, ground cinnamon, and plant milk until smooth.
  • Drizzle the glaze over the fritters before serving.

Notes

Serve the Vegan Apple Fritters warm for best taste. Store leftovers in an airtight container at room temperature for up to two days, or refrigerate for up to a week. Reheat in an oven or air fryer to maintain crispiness.
