  • 2 cups fresh vegetables of your choice (zucchini, bell peppers, carrots) Feel free to mix in whatever vegetables you have on hand.

Cooking Essentials

  • 1 teaspoon garlic powder Adds wonderful depth to the flavor!

Instructions
 

Preparation

  • Wash your fresh vegetables and cut them into bite-sized pieces.
  • In a large skillet, heat the olive oil over medium heat.

Cooking

  • Add the chopped vegetables to the skillet.
  • Sprinkle in the garlic powder, salt, and pepper, stirring everything together.
  • Sauté the vegetables for about 8-10 minutes, stirring occasionally.
  • Just before they are done, stir in the fresh herbs.

Serving

  • Taste test and adjust seasoning if necessary.
  • Transfer the vegetable medley to a serving dish and enjoy!

Notes

Mix and match your vegetables based on seasonal availability. For added protein, include cooked chicken or chickpeas. Leftovers can be stored in an airtight container for up to three days. When reheating, add a splash of broth for extra flavor.
