Spices

Instructions
 

Preparation

  • Gather all your ingredients. Chop onions, garlic, and peppers, and shred the rotisserie chicken.

Cooking

  • In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions and garlic; sauté until translucent.
  • Add diced poblano and Anaheim peppers. Cook for about 5 minutes until they start to soften.
  • Stir in shredded rotisserie chicken and Great Northern beans, coating with aromatics.
  • Add sweet corn and stir; let it cook for a minute or two.
  • Season with cumin, chili powder, and other spices as desired. Mix well.
  • Pour in enough water or chicken broth to cover ingredients and bring to a gentle simmer. Let bubble for 20-30 minutes.
  • Taste and adjust seasoning as needed.
  • Serve hot in bowls topped with cheese, jalapeno slices, cilantro, and tortilla strips.

Notes

Let the chili rest after cooking for better flavor. You can add fresh herbs just before serving for extra flavor. Adjust spice level to taste.
