  • 1 lb beef, thinly sliced Choose a good cut, like flank or sirloin, to ensure tenderness.
  • 2 lbs winter melon, peeled, seeded, and cut into chunks Absorbs flavors beautifully while providing a slightly sweet taste.
  • 1 tbsp oil Vegetable or canola oil for a neutral flavor.
  • 2 slices ginger, fresh Adds warmth and brightens the dish.
  • 4 cups beef broth Homemade broth adds depth to the flavor.
  • 1 tsp salt Enhances all the flavors.
  • 1/2 tsp white pepper Gives a gentle kick.
  • 1/4 cup cilantro, chopped For garnish and fresh flavor.

Preparation

  • Marinate the Beef: Combine beef slices with soy sauce, cornstarch, and a pinch of white pepper. Let it sit for about 15 minutes.
  • Sauté Aromatics: In a large pot, heat the oil over medium heat. Add the ginger slices and sauté until fragrant.

Cooking

  • Add the marinated beef to the pot and stir-fry until browned, then pour in the beef broth and bring to a boil.
  • Once boiling, add in the winter melon chunks. Reduce heat and simmer for 20 to 25 minutes.
  • Season the soup with salt and white pepper to taste. Garnish with chopped cilantro just before serving.

Notes

When marinating the beef, add a splash of sesame oil for extra flavor. If winter melon is unavailable, zucchini or mushrooms can be substituted. This soup pairs well with crusty bread or steamed rice.
