Ingredients
  

Main Ingredients

  • 1 pound Italian sausage
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cans 15 oz each white beans, drained and rinsed
  • 1 can 14.5 oz diced tomatoes
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 2 cups kale or spinach, chopped
  • 1 tablespoon olive oil

Instructions
 

Cooking Instructions

  • In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned.
  • Add the onion and garlic, cooking until the onion is translucent.
  • Pour in the chicken broth, then add the white beans and diced tomatoes.
  • Season with oregano, salt, and pepper. Bring to a simmer, cooking for 15-20 minutes.
  • Stir in the kale or spinach and cook until wilted.
  • Serve hot.

Notes

To enhance the flavor, try adding a bay leaf while it simmers (remove before serving)! For heat, add red pepper flakes. Substitute greens as desired. For a vegetarian version, use plant-based sausage and vegetable broth.
