Ingredients
  

Coleslaw Ingredients

  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 medium apple, julienned (preferably Granny Smith) Slice right before mixing to prevent browning.
  • 1/4 cup thinly sliced red onion

Dressing Ingredients

  • 1/2 cup Greek yogurt Can substitute with mayonnaise or dairy-free yogurt.
  • 2 tbsp Dijon mustard
  • 1 tbsp honey Use a vegan sweetener for a vegan option.
  • 1 tbsp apple cider vinegar
  • 1/2 tsp celery seed (optional)
  • to taste Salt & pepper

Instructions
 

Preparation

  • In a large bowl, combine shredded cabbage, carrots, julienned apple, and red onion.
  • In a separate small bowl, whisk together the Greek yogurt, Dijon mustard, honey, apple cider vinegar, celery seed (if using), salt, and pepper until smooth.
  • Pour the dressing over the slaw mixture and toss to combine well.
  • For the best flavor, refrigerate the coleslaw for 30 minutes before serving.

Notes

Store any leftover coleslaw in an airtight container in the refrigerator for 3 to 5 days. Cabbage may soften over time but flavors will enhance. Mix thoroughly for even flavor.
