  • 2 cups shredded carrots
  • 1 large green apple, julienned Use crisp green apples for a tart flavor, or try sweeter varieties like Fuji.
  • 1/4 cup chopped fresh parsley

Dressing

  • 1/2 cup Greek yogurt or light mayonnaise For a lighter dressing, use plain Greek yogurt instead of mayonnaise.
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt & pepper to taste

Preparation

  • In a large mixing bowl, combine the shredded carrots, julienned apple, and chopped parsley.
  • In a separate small bowl, whisk together the Greek yogurt (or mayonnaise), apple cider vinegar, and honey. Add a pinch of salt and pepper.
  • Pour the dressing over the carrot-apple mix.
  • Toss until everything is well coated.
  • Let the slaw sit in the fridge for 10–15 minutes before serving.

Notes

Zesty Apple & Carrot Coleslaw pairs well with grilled chicken, pork, or sandwiches. It can also be served in a taco or on top of a burger for an extra crunch. For storage, place it in an airtight container in the fridge, lasting about 3 to 5 days. Avoid freezing to maintain texture. For spicy variation, add a pinch of cayenne or finely chopped jalapeños.
