  • 2 cups grated zucchini Make sure to squeeze out excess moisture
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to experiment with different types of cheese
  • 1/2 cup almond flour Can be substituted with regular flour or a gluten-free blend
  • 4 large eggs
  • 1/2 teaspoon baking powder
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • Optional: herbs (like basil or oregano) Use fresh for best flavor; dried herbs will also work

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine grated zucchini, cheese, almond flour, eggs, baking powder, garlic powder, salt, and pepper. Mix until well combined.
  • If using, fold in herbs for added flavor.
  • Pour the mixture into a greased loaf pan and spread evenly.

Cooking

  • Bake for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  • Let it cool for a few minutes before slicing. Serve warm.

Notes

Zucchini Cheesy Bread is best served warm. It pairs wonderfully with soups and salads and can be enjoyed at breakfast with eggs or avocado. For storage, wrap it tightly and refrigerate for up to five days, or freeze slices for longer storage.
