  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Squeeze excess moisture from the shredded zucchini to avoid soggy bites.
  • In a bowl, mix the zucchini, egg, Parmesan cheese, breadcrumbs, minced garlic, dried basil, dried oregano, salt, and pepper until well combined.
  • Roll the mixture into small balls and place them on the prepared baking sheet.

Baking

  • Bake for 15-20 minutes, flipping halfway through, until the bites are golden brown.
  • Allow to cool slightly, then serve warm with a dipping sauce of your choice.
