Vegetables

Soup Base

  • 4 cups chicken broth Sets the stage for our creamy soup base.
  • 1 cup heavy cream Adds a rich creaminess.

Instructions
 

Cook the Bacon

  • In a large pot, cook the bacon over medium heat until it’s perfectly browned and the fat has rendered for about 5-7 minutes.
  • Remove the bacon from the pot and let it drain on a paper towel, keeping a bit of that delicious bacon grease in the pot.

Sauté the Sausage

  • Add the Italian sausage to the same pot and cook for about 4-5 minutes until it’s browned and cooked through, breaking it up with a wooden spoon.

Add the Onion

  • Toss in the chopped onion and cook until softened, about 3-4 minutes.

Stir in the Potatoes

  • Add the diced potatoes and 4 cups of chicken broth to the pot, bringing it to a gentle boil, and cook until the potatoes are tender, about 10-15 minutes.

Add the Kale and Cream

  • Once the potatoes are fork-tender, stir in the chopped kale and then add 1 cup of heavy cream, stirring to combine.
  • Let the soup simmer for another 5 minutes.

Season to Taste

  • Taste the soup and season with salt and pepper according to your preference. Optionally, add red pepper flakes for a spicy kick.

Notes

For a thicker soup, let it simmer longer to reduce the broth. Add fresh herbs like thyme or rosemary to elevate the flavor. Serve with crusty bread or a light salad.
