  • 1 cup unsweetened shredded coconut
  • 1 cup chocolate chips
  • 1 cup chopped almonds
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, combine the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the butter and sugar mixture, stirring until blended.
  • Fold in the shredded coconut, chocolate chips, and chopped almonds until evenly mixed.
  • Drop spoonfuls of the cookie dough onto ungreased baking sheets, spacing them apart.
  • Bake for 10-12 minutes until the edges are golden brown.
  • Allow the cookies to cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely.

Notes

For best results, ensure butter is at room temperature before mixing. Cookies can be paired with milk or coffee and stored in an airtight container for about a week. For longer storage, freeze the cookies in a freezer-safe bag or container for up to three months.
